I'm looking for a new bike for a mixture of cycling around the city, commuting as well as longer trips on a mixture of tarmac as well as gravel and dirt tracks. I've been considering the temple cycles adventure disk 3, a sonder camino or a Fuji touring disk LTD. Is there any other bikes I should be looking at?
These days the answer seems to be "whatever you can find in stock". Or I guess with an acceptable waiting list. I don't think there are actually many 'bad' bikes around - it really depends on what you fancy. Some are arguably worse value for money (steel, big brands, Italian...), but they all do the job. It's a 'heart' rather than 'head' decision.
Pretty much every brand has a bike suitable for what you want to do these days so there are dozens at least. Both of your choices would work fine. As said, go with your heart not head, decide how much you want to pay and choose.
There is limited stock so you do have to decide whether to get one and ride it or wait, probably till nearer Autumn for the exact one you want.
